Jump to Recipe Print Recipe

This is a homemade calzone recipe, and you can make this quick and easy calzone recipe in the air fryer.

I even made the dough from scratch, and it probably took me just a few ingredients to make the dough and use it the night day.

You can even make the dough 7-8 hours before the time you need to start making your calzones, and the results are just outstanding.

I have years of practice making pizza dough so trust me, I will share with you the simplest dough recipe here, which you can use to make calzones, hot pockets, and pizza.

So, without wasting any more time, let’s get started with this interesting recipe.

Ingredients

1. Dough

-500 grams of All purpose flour

– 5 grams of yeast

– 1 tbsp of honey

– warm water

– 1 tbsp Salt

2. Pizza Sauce (You can make your pizza sauce or get some store-bought pizza sauce both work well)

3. Cheese
You can use fresh mozzarella cheese here or any dry mozzarella cheese. I prefer using dry mozzarella or processed cheese.

4. Egg

5. Oil (In case you cannot use egg)

How to make a Calzone

Making the Dough

Mix the dry yeast, warm water (lukewarm and not boiling water), and 1 tbsp of honey together in a cup and keep it aside for the yeast to ferment. The yeast froths up when it ferments, so give it 10-25 minutes to get there.

Tip- Do not use boiling hot water, which will kill the yeast. Make sure the water is warm enough to put your finger in it.

Take a separate bowl and add flour and salt to it, and then mix this mixture with some more water and knead the dough to form a ball.

Once the dough is ready, cover it with a wet cloth or a cling film wrap and lets it sit for about 6-7 hours to ferment. You can then use it to start making the calzone.

I ideally recommend letting the dough sit for at least 8 hours before you start making the calzone but 6 hours is fine too.

You can store the leftover dough in the refrigerator in an air-tight container. You can use this dough recipe for pizzas, hot pockets, pizza pockets and so many other recipes.

Making the Calzone

Now, let’s get started with the actual calzone recipe.

1. Make a dough ball (from homemade dough or store-bought both work) and roll it out in a circle.

2. Once you have rolled out the dough, on one side add some marinara sauce/pizza sauce and top it with some toppings of your choice, I had mushrooms at the time, so I used mushrooms.
You can put any toppings you like inside your calzone; I love experimenting with different toppings, so you can try that too.

Add toppings, sauce and cheese only on one half of the calzone. I have added processed cheese since it has less water content and it tastes amazing. You can add dry mozzarella cheese if you want.

3. Add Cheese- I try not to use fresh mozzarella here because of the water content in it; I use processed cheese here because that is what I had, but you can use any cheese you like.

4. Now fold the calzone and press the edges using a fork, as shown in the picture below. This seals the calzone and you will not have any spillage while it cooks in the air fryer.

Press one side of the calzone using a fork to seal the edges

Now, our calzone is ready!

How to cook CALZONE in Air Fryer?

Finally, we reach the point where we are going to cook this calzone that we made from scratch in the air fryer.

1. Place the calzone in the air fryer basket. I have placed one calzone here, but you can easily fit two calzones. Make sure you do not overcrowd the basket and that there is enough space for the calzones.

2. Now, you can apply some egg wash on top of the calzone. I apply a very thin layer, so the egg doesn’t stink up the calzone. If you do not want to apply egg wash, you can spray oil on the calzone.

You do not need to use egg and oil; use any of them.

3. Now cook on one side at 350°F for 4 mins.

This is the top side after 4 mins

4. Now flip the calzone and apply another thin layer of egg wash and cook at the same temperature for 3-4 mins.

This is the other side of the calzone. It is cooked but it is not as crispy as the top part so apply some egg wash on this side as well and cook it for another 4 mins at the same temperature

5. The calzone should look something like this once you cook the other side.

5. Once you have both sides cooked, I give the top side a final 1-minute cook at 350°F. This last minute gives both sides a nice golden color.

Calzone is ready!!

Tips for Cooking Calzone in Air Fryer

1. Cooking both sides for 4 mins each is important to get even color on the calzone and not have just the top that is golden brown in color and the bottom is white like Casper the friendly ghost.

2. Do not overcrowd the air fryer- this will cause uneven heating, and the calzone won’t come out as good as you want it to.

3. Egg wash or oil?- I feel egg wash gives the calzone a better color and flavor, but you can use oil as well, and you can still get the nice golden crispy texture. The calzone would not look as aesthetic as it does with an egg wash.

4. Toppings- You can add chicken and other meat toppings inside the calzone, avoid overcrowding the calzone as that could make the dough wet and heavy. Do not add too much topping that releases a lot of water when cooked.

Time and Temperature for cooking Calzone

Frozen Cooked Calzone350°F5 min
Frozen Uncooked calzone350°F4 min each side= 8min

Can you freeze these homemade calzones?

Yes, you can freeze these homemade calzones. They will last easily for three months in the freezer.

You can cook the frozen calzone following the steps mentioned above. You do not need to thaw the calzone, you can cook it directly from the freezer in the air fryer, and it cooks perfectly alright.

If you have stored a cooked calzone in the freezer, you need to reheat the calzone.

Reheating the calzone is much easier as all you have to do is put the frozen calzone in the air fryer basket, set the temperature to 350°F, and cook for 3-4 minutes.

This will reheat the calzone, and you do not need to flip it while reheating. As you must have already cooked both sides before freezing, all you have to do is reheat the calzone, and hence no flipping is involved.

How long does a calzone last in the refrigerator?

A calzone(cooked one) can last around 4-5 days. When you want to eat it, reheat the calzone at 350°F for 3-4 minutes.

It can last for about a week if you are storing raw calzone. You can cook this raw calzone using the steps mentioned above or in the recipe card below.

How to reheat calzone in air fryer?

If you have frozen these calzones then cooking them inside the air fryer is easy. If you froze them while they were still uncooked then follow the same cooking steps as above.

If they are already cooked and you froze them and now just want to reheat them then reheat the calzone at 350°F for a good 5 minutes. You can coat the calzone with oil and NO EGG, so this will contain the moisture of the calzone and not make it dry.

  • 500 grams All Purpose Flour
  • 5 grams Dry Instant Yeast
  • 1 tbsp Honey
  • 1 tbsp salt
  • 280 ml Water
  • 2 tbsp Pizza Sauce
  • Mushrooms(Topping of your choice)
  • Cheese

  • Let's start with making the dough for calzone. Take 100 ml of water in the bowl, add yeast and honey and mix it well. Let the water be lukewarm and not hot to the touch.
  • Now, add flour to this water and slowly inccorporte the flour by adding portions of it and not adding everything at once.
  • Now use the leftover 180ml of water and flour and form a dough. Let this dough rest for 7 hours(10 hours is ideal, but 7 hours is good enough).
  • Once the dough is ready, make a dough ball and stretch it out using a rolling pin .
  • Now add pizza sauce, mozzarella cheese, and toppings of your choice on one side of the calzone
  • Fold the calzone and seal the corners using a fork.
  • Make an egg wash by beating an egg in a bowl and apply a thin layer of this on top of the egg using a brush.
  • Cook this calzone in the air fryer at 350 °F for 4 minutes on one side.
  • Now flip the calzone, apply egg wash on the other side, and cook that for another 4 minutes.
  • This will cook the calzone evenly on both sides, and now, enjoy your calzone!

Notes

1. You can make calzones and store them in the freezer; all you have to do is remove them from the freezer and cook them directly in the air fryer using the same techniques mentioned above.
2. You can replace egg wash with oil if you are a vegetarian. Oil also gives the calzone a nice toasty color.
